Oven Baked Zucchini Chips

Why hit the vending machine when you can have a yummy superfood snack, like Oven Baked Zucchini Chips? Zucchini is one of our vegetable favorites. With the perfect combination of seasonings, this recipe turns a mild-flavored vegetable into a tasty, crunchy treat. Skip the processed bag of chips, and replace it with these fantastic Oven Baked Zucchini Chips. They’re only 99 calories per serving!


Ingredients

1 (large) zucchini, cut into 1/8" - 1/4" slices
1/3 cup whole grain breadcrumbs, optional Panko (homemade breadcrumb recipe)
1/4 cup finely grated parmesan cheese, reduced fat
1/4 teaspoon black pepper
Kosher or sea salt to taste
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper
3 tablespoons low-fat milk
Directions

Preheat oven to 425 degrees.
Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Note: It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick.
Arrange zucchini on a non-stick cookie sheet and lightly mist with a non-stick cooking spray.
If using a rack, place rack on a cookie sheet. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). Allow to cool to room temperature before storing in an airtight container.
TIP: Zucchini Chips will continue to get crispier while cooling.
NOTE: For gluten free chips, use gluten-free bread crumbs.


Cinnamon Apple Chips

Cinnamon Apple Chips, made with a few simple ingredients like McIntosh apples, cinnamon and sugar are a healthy snack your whole family will love.

Ingredients

4 Apples, cored and sliced 1/8” thick (I used McIntosh)
1-2 tsp . Ground Cinnamon
1-2 tsp . Granulated Sugar, if needed
Cooking Spray

Instructions

Preheat oven to 200 degrees fahrenheit.
Add the sliced apples to a large bowl; then coat the apples with the cinnamon and/or sugar.
Spray a baking sheet with cooking spray and line the apples flat on the pan. You may need to use two pans so that they are not overlapping.
Bake 2-3 hours until the chips are dry yet still soft. Allow to cool completely before placing them in an air tight container for up to 4 days (if they last that long!)


ROASTED PARMESAN BROCCOLI



Today I have one more to add to the tasty veggie recipe lineup: Roasted Broccoli with Parmesan Cheese, Sliced Garlic and Lemon Zest!  So delish and so perfect for this time of year.
It’s a pretty straight-forward recipe… you slice the broccoli into one-inch thick steaks, then season with salt, pepper, & chili pepper flakes and toss gently with some olive oil.  Bake for about 10 minutes, add thinly sliced garlic cloves, and then back into the hot box for 6 more minutes.  Finally, sprinkle the broccoli with some Parmesan cheese – ’cause we can – and finish it off in the oven for about 2 more minutes.  Dust it with some lemon zest, and indulge!

Honey Pistachio Avocado Toast

Hello friends.

Happy to say we made it through the weekend. Onward and upward, right? Right.

Today’s post is brought to you by Avocado Toast. I mean, it’s just the best. I could literally eat it EVERY. SINGLE. DAY. Talk about variety… or not. Variety is a big thing I am working on right now. Trying to get out of the ruts I get myself into and in doing so, I have thrown out all of the ‘rules’ I feel like I am still living by. For quite some time, I have noticed that I am not always listening to my body. While I am much more open to food choices, there is still a bit of hesitance around certain foods. So the rules are gone. Absolutely no food is off limits. There is no bad food. And you know what? I am learning a LOT. More to come over the next several weeks, but I talked to you about avocado toast and then led you on a complete tangent. So back to the goods.




 Ingredients

2 pieces bread of choice
1/2 avocado
2-3 tsp honey
1/4 c raw shelled pistachios
sea salt

Instructions

Toast bread.
Spread avocado over each piece of toast, add a dash of sea salt to each piece if desired.
In a small plastic bag, add all pistachios and pound with a wooden spoon to break into small pieces.
Spread pistachios evenly over the two pieces of toast
Drizzle the honey over each piece of toast.

Chicken, Cranberry, Pecan Salad Wraps Recipe

hicken, Cranberry, Pecan Salad Wraps – a super lunch or wonderful addition! This salad is perfect for any occasion and very easy to make. Chicken, Cranberry, Pecan Salad Wraps – delicious and satisfying!




Prep time:  10 mins Total time:  10 mins

INGREDIENTS

3 cup cooked, shredded chicken
½ cup dried, sweetened cranberries
½ cup chopped pecans
¾ cup chopped celery
½ cup mayonnaise
Salt, optional
White pepper, optional
1 teaspoon Parsley, fresh
4 large tortillas or wraps

INSTRUCTIONS

In a large bowl combine chicken, cranberries, pecans and celery
Stir to combine
Add mayonnaise, salt, white pepper and mix well
Place tortilla on a plate
Layer with a spoonful of chicken mixture, sprinkle with a pinch of fresh parsley
Roll wrap, cut and enjoy

GREEK TURKEY BURGERS

Visiting this blog, I realized how you can quickly and easily prepare a culinary masterpiece. These turkey burgers will make a healthier replacement for usual beef or pork burgers you’ve probably got used to. The turkey meat is considered to be much wholesome, as it contains less fat, and if you think that turkey is tough and dry, here’s a right way to cook it! The turkey burgers made half of ground turkey meat, sun dried tomatoes and spinach are even more wholesome, and turn out extremely succulent and tender. Served atop of puffy bun with yoghurt sauce, red onions and cucumbers it’s so fresh and delicious, still super wholesome.




Ingredients

7 ounces plain Greek yogurt
1 medium lemon
1/4 tsp minced garlic
1/4 tsp dried dill
1.25 pounds ground turkey
6 halves sun dried tomatoes
1 medium red onion
2 ounces frozen spinach
1/4 cup crumbled feta
1 tsp dried oregano
1/2 tsp minced garlic
1/3 cup bread crumbs
1large egg
1 medium cucumber
6 hamburger buns
salt and pepper, to taste

Instructions

1 . In a mixing bowl, combine the Greek yogurt, 1/4 tsp minced garlic, dill, juice of half the lemon and a dash of salt. Refrigerate while you make the burgers.

2 . Defrost the spinach and squeeze the water out. Chop the spinach and sun dried tomatoes, and dice 1/4 of the red onion.

3 . Combine the ground turkey with spinach, sun dried tomatoes, red onion, feta cheese, 1/4 tsp minced garlic, oregano, egg, bread crumbs, 1/2 tsp of salt and freshly ground pepper, to taste. Stir well until combined. Form six patties of the equal size and shape.
4 . Cook patties on a grill, skillet or over open flame until cooked through.

5 . Serve warm atop of yoghurt spread buns, topped with slices of red onion and cucumber.
